Suji (Rava) cake

Semolina/Suji/Rava cake is very simple and easy to prepare. no cake mixers and hand blenders are required for this cake. it can be prepared using a pressure cooker and no oven is required. This cake is similar to Basbousa which is a traditional Middle Eastern Sweet Cake Recipe. the difference is that they add flavored sugar syrup after the cake is fully done. the cake absorbs the sweetness and flavor and tastes really good.

Ingredients

  1. 1/2 cup unsalted butter
  2. 3/4 cup Powdered sugar
  3. 1 1/2 cup semolina
  4. 1/2 cup Maida
  5. pinch salt
  6. 1/4 tsp Cardamom powder
  7. 1 cup milk to adjust consistency
  8. 3/4 tsp Baking powder
  9. 1/2 tsp baking soda
  10. As needed Chopped dryfruits
  11. 2 tbsp tutti frutti

Steps

  1. Firstly, in a bowl take melted butter, powdered sugar. Beat continuously, till the mixture turns silky smooth.

  2. Add rava, maida, salt and cardamom powder. additionally, add curd and milk.

  3. Mix well and soak for 30 minutes.

  4. After 30 min add baking powder and baking soda. furthermore, add dry fruits and 2 tbsp tutti frutti.

  5. Mix well and transfer to cake tin. bake the cake 180 degrees.
